Bread and butter

Slow cooked pork belly with wild garlic leaves, flowers and green asparagus

Smoked and glazed sweetbreads with a burnt celeriac purée, black garlic and apple gel, toasted hazelnuts and an Albufera sauce

Poached white asparagus, slow cooked duck egg rolled in leek ash, truffle hollandaise and chives

Cured mackerel with grilled cucumber, horseradish granita, buttermilk sauce split with dill oil and nasturtiums


Pan roasted turbot and scallop, braised spring onions coated in chicken crumb, sea vegetables, watercress and a chicken and crème fraîche sauce

24 hours brined then roasted guinea fowl from Bresse, sautéed morel mushrooms, braised leg rolled in pancetta, carrot purée and a Vin Jaune sauce
