Wood pigeon cooked on the crown, baby beetroot, beetroot ketchup, red chicory and pomme souffles served with a chicken jus
Tandoori monkfish served with sea vegetables, chilli chutney, pommes maxim and a smoked tomato, saffron and pepper velouté
Loin of Venison cooked over coals and smoked with herbs and juniper, salsify, spiced red cabbage puree, fermented blackberries, butterfly sorrel, cocoa nib and port jus
Pan roasted wild Halibut and scallop, braised spring onions coated in chicken crumb, sea vegetables, watercress and a chicken and crème fraiche sauce
Jerusalem artichoke pithivier, artichoke puree, baby artichoke, fresh truffle and a mushroom and truffle jus
Rack of lamb with confit belly of lamb, pea and mint puree, goats curd, ratatouille and a lamb jus finished with preserved lemon
‘Plaisir Sucre’ Hazelnut dacquoise, Hazelnut praline Feuilletine, dark chocolate ganache, milk chocolate chantilly
Mulled wine poached pear, chocolate soil, orange gel served with a dark chocolate and blackberry ice cream
