Cotto at The Gonville Closure

It with great regret that the partners in Cotto at the Gonville have come to the conclusion that it will not be possible to continue to run Cotto at The Gonville Hotel in the changed environment post lockdown. Requirements in the restaurant and kitchen make it unlikely that Cotto could be both safe and viable and therefore Cotto will not re-open at The Gonville Hotel. 36 employees have been given notice to terminate their employment on 31st July.  The Gonville Hotel will re-open its food and beverage service when the Directors of the Gonville Hotel are confident that it can provide a safe and attractive environment for guests and staff.  Where possible, roles in the revised food and beverage service will be offered first to Cotto employees and consultations are ongoing.

Hans Schweitzer the Michelin starred chef and his partner Ruth Butler, being partners in Cotto at The Gonville have retained the Cotto name and goodwill.

Hans Schweitzer said ‘After three successful years it is with great regret that Ruth and I and the other directors of Cotto Restaurant at the Gonville Hotel have come to the conclusion that it will not be possible to continue to operate an additional Fine Dining Restaurant at the hotel in the changed environment, post lockdown. Social distancing and legal requirements both in the restaurant and kitchen areas make it impossible to plan and run two safe and viable dining operations.

David Chaplin, Chairman of Gonville Hotels Limited said ‘We would like to thank Ruth and Hans and their team for three very successful years at the Gonville Hotel. It has been a great project to be associated with and we are saddened that it has not been possible to put in place practical steps to enable Cotto to continue at the Gonville. We wish Ruth and Hans every success in their next project. Looking to the future, food and beverage at The Gonville will necessarily be provided in different ways to maximise safety but there will be no compromise on service standards or quality and we look forward to re-opening our hotel and its restaurant, bar and Wellness at the earliest opportunity.”
